Freeze-dried Powder
In the powdered coffee industry freeze drying of coffee extract is a
widely used drying method which is considered as the best possible drying
technique. Coffee extract is frozen and vacuum-dried at low temperatures
resulting in an instant product with good aroma retention.
Freeze
drying gives high production cost due to high investment and operating cost. To
reduce these cost it is economical to concentrate the coffee extract prior to
drying. Conventional thermal concentration methods reduce the quality of the
extract.

Freeze concentration costs are much lower than freeze
drying. Consequently, pre-concentration with freeze concentration reduces the
total production cost while the quality retention is maximal.
